Mini Doughnuts


My kids like most kids are big doughnut fans , so when my sister gave us a mini doughnut maker for easter, it was the perfect new appliance for this household.  Over the past couple of weeks, we have tested out a few different recipes but they all seemed to have huge amounts of batter, so today I worked on making a smaller amount of batter for our miniature doughnuts. Even with this smaller amount you will still get 36 mini doughnuts out of it! This recipe has been made especially for a mini doughnut maker which is similar to a good old Jaffle maker, but as you can imagine has the shapes of doughnuts!

What you need…

  • 2 and a half tablespoons of softened butter, I used nuttelex for a dairy/lactose free option
  • 1/4 cup of caster sugar
  • 1 small egg
  • 1/4 a cup of milk, I used Zymil lactose free milk
  • 1/2 a teaspoon of vanilla
  • 1 teaspoon baking powder
  • pinch of salt
  • 3/4 a cup of plain flour.
For the topping
some cinnamon sugar- 1/4 cup caster sugar & 1/2 teaspoon cinnamon powder
strawberry icing- 1 cup icing sugar, 1 tablespoon boiling water, 1 teaspoon butter or nuttelex, pink colouring, and 1/4 teaspoon strawberry flavouring. Sprinkles.
How you do it…
  • In your mixmaster or a medium bowl with a  hand mixer, cream the sugar and butter together 
  • Add the egg and milk, continuing to mix
  • Add in the vanilla, baking powder, salt and flour, mixture well of 1 minute.
  • You should now have a thick batter that you can transfer into a piping bag
  • While you are getting the batter into a piping bag, turn on your doughnut maker and let heat for 4 minutes
  • Cut a hole in the end of the bag and carefully pipe around the doughnut moulds.
  • Close the lid and 'bake' for 3 minutes!
  • If you are covering in the cinnamon sugar throw the hot doughnuts straight into a bowl with the cinnamon sugar and toss them around until covered
  • If you are icing the doughnuts let them cool for about 10 minutes before making the icing.
Icing withStrawberry icing.
  • Place a heat proof bowl over the top of a medium saucepan of simmering water
  • In the bowl place the icing sugar, boiling water and butter, mix together well, then add the colouring and strawberry flavouring, do not let the icing heat too much, and remove completely from the heat once all ingredients are combined and you're happy with the colour.
  • Working quickly not letting the icing cool too much dip each doughnut into the icing and then quickly dip half the doughnut into some sprinkles if you desire.
  • If the icing starts to set just give it a quick stir to brake it up so dipping is easier.

  1. I've never done doughnuts even though I love them! Yours look so sweet and I'm glad you bake with dairy free ingredients, I always try to bake using alternatives to dairy.
